Homemade Pecan Rolls

I’m just going to start off with saying these are the BEST Homemade Pecan Rolls you will ever try! I just know it!! You definitely need to make these! They are the fluffiest and most delicious pecan rolls you will ever eat!

As I did some research on pecan rolls I realized that my recipe is totally different from most out there. My Pecan flavoring is in the filling which needs to be brought to a boil and cooled off. Then we spread that deliciousness all over the dough and get the softest pecan rolls ever.

Another thing I realized, as I was editing the recipe video for these homemade pecan rolls, was that probably not all of you have flavored cornstarch easily available to you. I tried searching for it on Amazon and couldn’t find it. If it’s out there, Amazon usually has it right!?

So if you are struggling to find the pecan flavored cornstarch, don’t worry you can still make them! Just use regular cornstarch, and then add 1-2 Tablespoon of Pecan Flavoring Extract. That seems to be available everywhere. So you should have no trouble finding it! You want to make sure to still use the cornstarch in the recipe, as that is what we are using to thicken the filling so be sure to have some on hand.

This recipe does require a lot of time and patience to make but it is so worth it in the end! By planning out the time wisely and preparing the filling and frosting while waiting for the dough to rise you can save yourself some time.

Homemade Pecan Rolls

Ingredients
  

Pecan Roll Dough

  • ½ cup water warm
  • 1 Tbsp active dry yeast
  • 1 Tbsp granulated sugar
  • ¾ cup milk warm
  • ¼ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 ½ tspn salt
  • 2 eggs room temperature
  • 3 ½ cups all-purpose flour

Pecan Roll Filling

  • ¾ cup granulated sugar
  • 5 Tbsp Pecan Flavored Cornstarch (See notes for substitute)
  • 2 ½ cups heavy cream
  • ¼ tspn salt

Creamy Frosting

  • ¾ cup granulated sugar
  • 2 Tbsp Cornstarch
  • 2 ½ cups heavy cream
  • ½ cup Maple Syrup
  • ¼ tspn salt

Instructions
 

Pecan Roll Dough

  • In the bowl of a stand mixer, combine 1/2 cup of warm water, 1 Tablespoon of sugar and 1 Tablespoon active dry yeast. Let that sit for about 5 Minutes until the yeast starts to activate. 
  • Then add in warm milk, 1/4 cup of sugar, vegetable oil, 2 eggs and salt. Using the whisk attachment mix it until all the ingredients are well combined.
  • Change out the whisk attachment for the Dough hook and add in 2 cups of all-purpose flour. Mix that on low speed and scrape down the sides of the bowl as needed.  
  • Add in the remaining 1 ½ cups of flour and mix together on low speed. When the dough starts to pull away from the sides of the bowl and is just slightly sticky to the touch it is ready.
  • Cover your bowl with plastic wrap and let the dough rise for 30 minutes.
  • Then knead the dough down, cover up again and let it rise for 1 more hour.
  • Place the dough on a lightly floured surface and roll it out thinly, about ½ cm thick.
  • Spread the filling (instructions below) all over the dough. Then tightly roll the dough up.
  • Cut equal pieces, about 1 inch thick and place in a baking pan. Cover with plastic wrap and let them rise 1 more hour before baking.
  • Preheat oven to 350° F and bake for 20-25 Minutes or until the rolls are golden brown.

Pecan Roll Filling

  • While you wait for the dough to rise prepare the filling. For that combine sugar, pecan flavored cornstarch and salt. 
  • Then add only ½ cup of heavy cream and mix it together. Add the remaining 2 cups of cream and mix it all together.
  • Bring it to a boil on medium heat, while constantly stirring until the mixture starts to thicken.
  • Pour into a glass bowl and cover up with plastic wrap. Let it cool completely.

Creamy Frosting

  • While the rolls are baking make the frosting. Start by combining sugar and cornstarch.
  • Then add in the cream. Only half a cup at first, combine it and then add the remaining cream and mix it all together. 
  • Add in Maple syrup and salt. Mix it and bring to a boil over medium heat.
  • When it starts boiling and the mixture thickens remove from the oven. 
  • Pour it over the baked pecan rolls.
  • Sprinkle crushed pecans over the frosting if desired and enjoy!

Notes

If you can’t find the pecan flavored cornstarch, just add in 5 Tablespoons of the regular cornstarch and add 1 Tablespoon Pecan flavoring extract.
