Doctored Up Chocolate Banana Cream Pie Cake Recipe

Today I am sharing this doctored up Chocolate Banana Cream Pie Cake Recipe. It’s made up of the most delicious banana cake layers with a cookie crust. I filled it with delicious chocolate pudding and banana slices! Soo delicious!

I chose to post this recipe on pie day! If you didn’t know January 23rd is Pie day so Happy Pie Day! As I was planning out my content for the next few months I looked at many different food days and was inspired to create a cake for some of those days!

Pie Day seemed like the perfect day to share a Cake Recipe inspired by a Pie. There are so many different Pies that I could turn into cake but had to keep it to one! Perhaps I will do more in the future!

Cake Contents

I thought Banana Cake layers would be perfect for this Chocolate Banana Cream Pie Cake! I wanted to get the flavor with actual Bananas and not just extract to get the best taste possible! Also I loved the cookie crust on each of my cake layers!

I filled the cake with a peanut butter chocolate pudding and placed banana slices all over it. Next I placed the top layer on top and covered the entire cake in whipped cream.

The Filling

I do not have just a normal chocolate pudding recipe uploaded yet but my Nutella Pudding is up. So go to that recipe and when you make it leave out the Nutella completely and instead add 2 Tablespoons of Cocoa Powder. That will give you a delicious regular chocolate pudding! Or you can just make the Nutella Pudding exactly as the recipe is. It would still go great with the cake!

If you also feel like having a bit of a Peanut Butter taste in your chocolate just add 2 Tablespoons of Peanut Butter to the Pudding. But that is totally optional. I personally love Peanut Butter but I know not everyone does so that’s something you can adjust easily to your liking.

I baked my Banana cake layers in 8in cake pans and had to bake them for a bit longer as the layers were a bit higher. But this cake would work great to do as 6in cake layers and you would even have one more crusted cake layer! Keep in mind that if you bake them in 6in cake pans you will need to bake them only for about 25 Minutes.

I decided to decorate the top like you would decorate a pie but really you could totally do any design on this cake! It turned out super cute though, don’t you think?

Doctored Up Chocolate Banana Cream Pie Cake

Delicious moist Banana Cake layers with a cookie crust, filled with chocolate pudding and banana slices! Covered in whipped cream making it the best pie in cake form!

Ingredients
  

  • 2 cups vanilla cookie crumbs
  • 4 Tbsp butter melted
  • 1 ⅓ cups mashed bananas (About 3 medium bananas)
  • ½ cup milk room temp
  • ½ cup buttermilk room temp
  • cup sour cream room temp
  • cup vegetable oil
  • 3 eggs room temp
  • 1 Tbsp vanilla
  • 1 box Betty Crocker Vanilla Cake mix

Instructions
 

  • Preheat oven to 325° F and prepare two deep 8" cake pans by lightly greasing only the sides with shortening and dusting with all purpose flour. Set aside.
  • Combine the cookie crumbs and butter until thoroughly combined.
  • Press into the bottom of the prepared cake pans. Set aside
  • In the bowl of a stand mixer whisk together bananas, milk, buttermilk, sour cream, vegetable oil, eggs and vanilla until well combined.
  • Sift in the cake mix. Mix until just combined. The batter should be smooth and completely combined but do not overmix!
  • Evenly divide batter between your cake pans and bake for 35-40 minutes or until a toothpick comes out clean.
  • When the cake is done, the top should spring back to the touch and when inserting a toothpick in the center it should come out clean with no wet batter.
  • Remove from the oven, go around the sides with a small offset spatula to separate the cake from the pan but not removing it from the cake pan just yet. 
  • Allow cakes to cool in the cake pans for about 5 minutes, then carefully flip the pans and remove the layers from the cake pans onto a cooling rack to cool completely before decorating.
